Last night, our neighbor Lily brought over a big bunch of ramps, a wild leek variety she and longtime beau Isaac scavenged in the woods, along with a block of colby from Dean & Deluca, where she works as a cheese master. This morning I cooked ramps and cheese together in a big fat omelette, which J and I split, toasted challah on the side. Delicious. First omelette I've had in weeks; best I've had in months.
